On a summer evening, it is nice to arrange a family tea party with delicious homemade cakes. And since mothers always have a shortage of time, we have collected only simple recipes for pies. But at the same time very tasty!

Choose the base dough – shortcrust or biscuit.

  • flour – 200 g
  • butter – 150 g
  • salt – 0.5 tsp
  • yolk – 1 pc.
  • water – 3 tbsp. spoons
  • sugar – 2 tbsp. spoons


  1. Cut the cold butter into small cubes or chop on a coarse grater. Mix it with flour, salt and sugar. Chop the butter with dry ingredients to a state of large crumbs.
  2. Separately, beat the yolk with water and gradually add to the flour mixture. Knead the dough until it becomes homogeneous. Then roll it into a ball and refrigerate for 30 minutes.
  3. Roll out the cold dough and put it in a baking dish, make the sides. Prick the dough with a fork to keep it from rising during baking.
  4. Mix fruit or berry filling with sugar, if desired, you can add cinnamon for flavor. If the berries are juicy, add potato or corn starch to them first.
  5. Bake in an oven preheated to 180 degrees. Average baking time is 40 minutes. Check the readiness of the dough with a toothpick: if it is dry, the cake is ready.

Biscuit dough


  • chicken egg – 4 pcs.
  • sugar – 150 g
  • wheat flour – 150 g
  • baking powder – 1 teaspoon


  • Mix the eggs with sugar and put the bowl in a water bath (the fire should be small). Beat the mixture with a whisk until it becomes homogeneous. Sugar should be completely dissolved.
  • Beat the egg and sugar mixture vigorously with a mixer for 8-10 minutes. Readiness can be defined as follows: if you run your finger over the surface, a groove should remain that does not disappear.
  • Add the sifted flour with baking powder and mix gently from top to bottom. Then transfer the dough to a greased form and bake for 20-25 minutes. The baking temperature is 200 degrees.
  • Experienced confectioners advise checking the readiness of the biscuit with the palm of your hand, lightly pressing your hand on the biscuit. If it “springs” like a sponge, then it is ready. If it does not rise when pressed, you need to bake more.
  • Any cream is suitable for a biscuit.
