Zucchini pancakes

Ingredients:

  • small zucchini – 2 pcs.
  • egg – 1 pc.
  • flour – 2-3 tbsp. spoons
  • vegetable oil – for frying
  • salt, ground black pepper – to taste
  • dill, parsley – 5-6 branches each
  • garlic – to taste

Cooking:

Grind the zucchini on a coarse grater, salt and leave for 5-10 minutes. Then drain the resulting liquid and squeeze the zucchini. Add an egg, finely chopped dill, garlic to the zucchini, then flour, salt, pepper. Thoroughly mix the mass and bake pancakes. Spoon into hot skillet.

Vegetarian zucchini boats

Ingredients:

  • zucchini – 2 pcs.
  • curd cheese – 250 g
  • hard cheese – 250 g
  • sour cream – 5 tbsp. spoons
  • green onions – 1 bunch

Cooking:

Cut the zucchini lengthwise and cook until half cooked. Carefully make a notch with a spoon. Mix curd cheese, grated cheese, greens and sour cream, fill with the resulting mass of zucchini and smooth. Sprinkle grated cheese on top. Bake in the oven until crusty at 180 degrees.

Fritata with baby zucchini

Ingredients:

  • zucchini – 1 pc.
  • eggs – 3 pcs.
  • strong small tomatoes (cherry) – 2 pcs.
  • parsley, dill – a few sprigs
  • salt, pepper – to taste

Cooking:

Cut the zucchini into slices, divide the tomatoes into several parts. Stew vegetables in vegetable or olive oil. Separately, beat the eggs, salt, pepper and pour into the vegetable mass. Fry until cooked, sprinkle with finely chopped herbs.

Zucchini rolls with hummus

Ingredients:

  • zucchini – 1 pc.
  • hummus (chickpea puree) – 200-250 g
  • red bell pepper – 1 pc.
  • salt, pepper – to taste

Cooking:

Cut the zucchini into thin longitudinal strips, brush with olive oil, sprinkle with salt and pepper and cook in the oven on the Grill mode for 5 minutes. You can, of course, put it in boiling water for just a few minutes, but when grilled, zucchini retains more of its beneficial properties.

Brush each strip of zucchini with chilled hummus, sprinkle with diced, oven-roasted, peeled red bell peppers. Roll up the rolls. The dish is ready.

Zucchini casserole

Ingredients:

  • zucchini – 1 pc.
  • eggs – 2 pcs.
  • cornmeal – 1 cup
  • grated cheese – 0.5 cup
  • olive oil – 3 tbsp. spoons
  • parsley and dill – a few sprigs
  • onion – 1 pc.
  • salt, pepper – to taste

Cooking:

Cut the zucchini, onion and fry. Mix in beaten egg and cornmeal. Add salt, pepper, finely chopped herbs. Pour into a baking dish and cook for 20-25 minutes at a temperature of 180 degrees.

Couscous with zucchini

Ingredients:

  • zucchini – 2 pcs.
  • couscous – 120 g
  • fresh or frozen green peas – 100 g
  • avocado – 1 pc.
  • vegetable broth – 250 ml
  • juice of half a lemon
  • salt, pepper – to taste

For sauce:

  • cottage cheese – 200 g
  • finely chopped garlic – 2 tbsp. spoons
  • finely chopped parsley – 1 tbsp. the spoon
  • salt, pepper – to taste

Cooking:

Cut the zucchini into pieces and sauté in a little oil. Add green peas, a little water and simmer until tender. Then remove the zucchini and peas from the dishes and cook the couscous in vegetable broth. When the cereal is almost ready, combine with zucchini and peas. Before serving, add chopped avocado and curd sauce with herbs and garlic.

Zucchini jam with lemon

Ingredients:

  • zucchini – 1 kg
  • sugar – 1 kg
  • water – 1 glass
  • lemon – 1 pc.

Cooking:

Combine sugar and water in a saucepan and heat until completely dissolved. Peel the zucchini from the peel and core, cut into small cubes or chop on a coarse grater. Combine zucchini with syrup and cook for one hour. 15 minutes before readiness, add lemon, scrolled through a meat grinder, into the jam. First remove the bones from it and scald with boiling water. Jam can be canned or stored in the refrigerator in tightly sealed jars.
