Eggplant, Potato, Pumpkin: 5 Young Vegetable Puree Recipes

Children love puree: it is soft, tasty and can be eaten faster than vegetables and fruits cut into pieces. Suitable as a main dish or as a side dish, the whole family is guaranteed to enjoy it.

We offer to diversify the family diet with those dishes, the recipes of which, most likely, are not yet familiar to you.

Baked eggplant puree

Ingredients:

  • eggplant – 3 pcs.
  • butter – 50 g
  • salt, ground black pepper – to taste
  • fresh herbs – a few branches

Cooking:

  1. Wash the eggplant, place on a baking sheet and bake in the oven at 180 degrees for about an hour. Determine the readiness of vegetables by their softness: they will be easily pierced with a fork.
  2. Cut hot vegetables in half, holding them by the tail. Then take out the pulp with a spoon, beat it with a blender or fork. Add butter, salt, pepper. Sprinkle with parsley or dill before serving.

This puree can be eaten warm or cold.

Mashed potatoes with cauliflower

Ingredients:

  • potatoes – 4 pcs.
  • cauliflower – 1 small fork
  • milk – 100 ml
  • butter – 50 g
  • greens – a few branches
  • salt – to taste

Cooking:

Peel potatoes, cover with water and boil until half cooked. Separate the cauliflower into florets and add to the potatoes. When the vegetables are cooked, drain the liquid and pass them through a puree press, add milk and butter. It is not recommended to use a blender – the puree will become too liquid and not very tasty.

Pumpkin puree

Ingredients:

  • small pumpkin – 1 pc.
  • cream – 50-100 ml
  • salt – to taste
  • butter – 50 g

Cooking:

Wash and cut the pumpkin, remove the seeds and fibers. Cover the pumpkin with foil and roast in the oven until tender (about 1 hour). Once cool, scoop out the pulp with a spoon and puree with a blender. Salt, add butter. Cream can be added if desired.

Zucchini puree with tomatoes

Ingredients:

  • zucchini – 2 pcs.
  • tomato – 1 pc.
  • butter – 50 g
  • salt and pepper – to taste
  • fresh herbs – a few branches

Cooking:

Wash the zucchini, cut into cubes and boil in boiling water until tender. Scald the tomato with boiling water, remove the skin from it. Then combine the vegetables and mash with a fork. Add oil and salt. Sprinkle with herbs.

Carrot puree with pieces of nuts and fresh paprika

Ingredients:

  • carrots – 4-5 pcs.
  • paprika – 1 pc.
  • walnuts – 2 pcs.
  • fresh herbs – a few branches
  • salt – to taste

Cooking:

Boil the washed, peeled carrots until tender, then mash with a mashed press. Pass the nuts through a meat grinder, cut the paprika into pieces. Combine all ingredients, add oil and salt. Sprinkle with fresh herbs.
